New Recipe – Pollo Frito

Our treasurer Mary Brady is back again with another bilingual recipe. Previous entries can be found here for quinoa soup, hot chocolate, and fun with parsley.

Pollo Frito

1 pollo mediano
1 rama de cebolla blanca
1 rama de perejil
1 rama de apio
3 limones

Sal, pimineta, y oregano al gusto

Ponga a hervir el pollo (entero o cortado en piezas) en agua hirviendo con la cebolla, apio, perejil, y oregano.

No se olvide de sacar la espuma.

Cuando este suave (no mucho) retire las piezas con la ayuda de un tenedor.  Pongalas en un recipiente y dejelas enfriar un poco.

Aparte exprima los limones, con cuidado (vea que no se mezcle el jugo con el zumo de la cascara, esto hace amargo el jugo).  Agregue a este jugo de limon unas 4 cucharadas del caldo en que cocino el pollo; ponga una cucharada de sal y pimiento al gusto.

Aline con esta preparacion todas las piezas del pollo deuna en una y friala en aceite caliente.

Sirve este pollo bien tostadito y caliente con papas fritas.

Fried Chicken

1 medium chicken
1 bunch of white onion
1 bunch of parsley
1 bunch of celery
3 lemons

Salt, pepper, and oregano to your taste.

Cook the chicken (either whole or cut up in pieces) in boiling water with the onion, celery, parsley, and oregano.

Don’t forget to remove the foam that rises to the top.

When it is somewhat soft, take the pieces out with a fork.  Put them into a bowl and let them cool off a little.

Squeeze the lemons (do not mix them with the juice from the chicken or it will make the lemon juice taste bad).  Mix the lemon juice with 4 tablespoons of the water that was used to cook the chicken.  Put in a tablespoon of salt and pepper.

Align the pieces of chicken next to each other in hot oil in a pan and fry them until done.

Serve hot with French fries!
